Add water and salt to a pan, bring to the boil and then add the macaroni cook for 10 minutes, not fully cooked as it will also cook in the oven. Drain excess water and set aside. Add butter and black pepper and mix together. 2. Cheesy sauce: 3. Pour evaporated or whole milk to a mixing bowl and add in with eggs, flour, 4. Mustard, paprika, 1 tsp honey, chilli powder, black pepper, scotch bonnet pepper and the onion. 5. Add 100g of each cheese; mature, mild and mozzarella cheese into the milk mix and whisk together. 6. Pour the liquid mix onto the pasta and stir, this should give it a creamy cheesy look. Then get a casserole dish and spoon a layer of macaroni, about a 1/3 of the dish height, into the dish and then sprinkle some of the 3 cheeses on top. Add another layer of maca- roni and then sprinkle more cheese on top. Repeat these steps un- til you’ve used all the pasta, remembering to save a good amount of cheese for the top layer. 7. Once the top layer is covered with cheese, give it a bit more add- ed FLAVA by crunching up some cream crackers or breadcrumbs for that extra crunchy topping, then bake for 20-25 minutes at pre-heated 180 degrees heat, until top is crispy and inside is bub- bling. 8. Flava tip: Great with family meals/ BBQ and great for as a side with any meal! Add cheese Doritos or cheese crackers for extra crunch and flava! METHOD INGREDIENTS // 1kg of macaroni // 500ml evaporated milk or whole milk // 2 beaten eggs // 100g of flour // 1 tsp of mustard // 1 medium onion (finely diced) // 1 tsp of black pepper // 1 tsp of chilli powder // 2 tsp salt // 1 Scotch Bonnet pepper (chopped) // 1 tbsp. of butter // 300g of mature cheese (grated) // 3000g of mild cheddar (grated) // 300g of mozzarella (grated) // Water // Cream crackers/breadcrumbs Our stomach growls even when we start to think of this dish! This is known as a worldwide dish, but in the Caribbean we really flava it up! And we’ve added an extra spin on it with the extra sweet inclusion of honey. Seasoning the cheese sauce with scotch bonnet, thyme, and garlic, using 3 different types of cheeses, and we layer the cheeses in-between rows of macaroni and then coat the top with more cheese and bake to create a slight crust at the top to produce the most flavaful taste, we don’t ramp with this dish! We remember going to family parties and this dish would be the first one to go, or you’d see family members sneak containers out to pack some away to take home! They’d pull out all the works to get some of the mac & cheese. Dipping into the thick cheese crisped topping into the cheesy macaroni mix in the center and pulling it up is one of the best feelings and a real instagram moment!
